Chicken cacciatore and Janas vegetables

A delicious main course to prepare for festive days. A classic chicken cacciatore, a comfort food of the Italian tradition, enriched by the Janas Food vegetable mix: artichokes, mushrooms, cauliflower tops, olives and carrots, all in a delicious jar. Also excellent for risottos and cold pastas or as or as an accompanying dish for cheese and charcuterie starters.

8 chicken thighs
1 onion
1 carrot
1 celery stalk
1 jar of Janas mixed vegetables
6 cherry tomatoes
1 glass of Vermentino wine
2 tablespoons of extra virgin olive oil
Aromatic herbs, salt and pepper as required
Procedimento:
Chop the onion, carrot and celery into small cubes. Fry them in a large frying pan with the oil. Add the chicken legs and brown them well on all sides. Season with salt and pepper.
Add the Vermentino wine and let it evaporate. Add the whole cherry tomatoes, the aromatic herbs and half the hot broth (you can prepare it beforehand with vegetables or choose a more flavoursome meat broth). Continue cooking for 30 minutes.
Add broth from time to time, as often as necessary to prevent the meat from drying out. Drain the Janas Food vegetables and add them to the chicken. Continue cooking for a further 30 minutes over a low heat.
Once the chicken is cooked, drain it well from the broth until you have a thick and creamy sauce. Serve the chicken cacciatore and Janas vegetables hot, accompanied by roast potatoes or hot bread croutons to mop up your plate with bread.
